I'm Tim Sheed, Head Chef of 1215 restaurant at Fairmont Windsor Park Hotel. My previous background is Michelin starred restaurants and accoladed country house hotels. In September 2022, I arrived at the Fairmont and have been working with my team to create a dining experience that has a sense of familiarity, but through creative execution and exemplary Customer service, delights and leaves lasting impressions. Our food style is led by seasonality and the various techniques used for each dish. I want our guests to have as much enjoyment in the restaurant as we have in the kitchen.
