Now open on The Pavement in Clapham Old Town is St Clair – a cevicheria, fish boutique and wine and sake cellar. Specialising in London-curated Nikkei cuisine, the restaurant fuses Japanese and South American cooking disciplines with French-style hospitality.
The kitchen is led by Head Chef Jorge Baumhauer da Silva, who was most recently Head Chef of the Brazilian Embassy, overseeing catering for the Embassy Building and the Ambassador’s Residence, alongside running a private food consultancy.
Prior to this, Baumhauer da Silva was Head Chef at Ceviche Restaurant Group for four years and oversaw the openings of sister restaurant Andina and Ceviche Old Street. Since 2016, Baumhauer da Silva has also been a teacher at Leiths cookery school in West London, lecturing on South American cuisine.
He brings to the role a wealth of experience and a passion for South American cuisine, working closely with owner of St Clair, Bertrand Le Net, to bring a unique and new food concept to london
